Crazy! Nice sherlocking there. Is the hydrogen peroxide supposed to cancel out the sulphite?

It's kind of stunning that we, as a society, haven't figured this out. How many people have this same intolerance, I wonder?

Not to cancel it out, but oxidize it to sulphate, which is harmless. That's what your body is supposed to do too, through the enzyme sulphite deoxidase. For most people, including my younger self, sulphites are completely harmless because they get oxidized. But it seems that that enzyme can fail (to be produced?) in some people. Those people get horrible hangovers from wine.
