Good man :D
Your experience with the unstoppable appetite for cheese sounds exactly like my cheese/yogurt/steak/sour cream hyperphagia, with the difference that it doesn't stop.

Yikes! I can't imagine resisting those cravings unless there was a literal gun to my head, and even then I'd cave eventually. Giving up smoking is trivial in comparison. No wonder sailors eat each other. I'm amazed anyone who's suffered a famine remains sane.
But yes, it did stop, once it was satisfied, and I haven't had anything like it since. Another clue?
Well the weird thing is, I don't usually have this sort of hyperphagia, only 30-60min after eating certain foods. Historically carbs/candy type stuff where you'd expect this, but after 8 years of keto and not eating those I notice it very distinctly with certain high protein foods like steak, brisket, whey protein, cheese, yogurt, and the aforementioned sour cream.
It goes away if I just willpower through the 1-2h after eating such foods.
So I suppose I could likely eat some of them, just not ad-lib. E.g. I don't eat my 150g beef meal ad-lib, probably exactly for this reason.
Normally, you're not craving anything. Not hungry at all.
You eat something with lots of protein in it, and that's fine, just like normal eating.
And then 30-60 minutes later you get massive starving-wolf like protein cravings.
And you can't satisfy them. However much protein you eat, you want more.
------------------
This is absolutely freaky. The 30-60 min delay must be to do with absorbing the protein. So once you get protein in your blood, you go mad for protein.
Does it happen every day after the daily ex150 beef?
I think this is important and most abnormal. What on earth can be going on? You should play with it and see if it leads to enlightenment.
In particular, how much sour cream do you have to mix into your whipped cream to get the effect? Will pure protein powder do it?
I don't know if it's "protein-cravings" in the sense that I crave protein; I crave anything. But if I just got it (from protein) it's likely that I still have some delicious protein around, so I'll eat that, which triggers it again. So it's a sort of never-ending wave of stuffing myself every 45-60 minutes until I'm out of food or painfully bloated.
Otherwise, pretty much, yea. This used to happen with (shitty) carbs, too, back when I ate "normal" instead of keto.
It doesn't happen with the ex150 meal, at least I don't notice it. So it could be that's not enough protein, or something else? It has definitely happened with pure brisket before, so fatty meat alone is enough.
It has happened with (flavored, sugar-free sweetened) whey protein powder.
I didn't notice it with my recent Fortagen, the EAA supplement. Not sure if different type of sweetener, or because you consume that in much smaller doses (1/2 to 1/4th of regular whey dose due to its alleged efficiency).
Actually now that you mention it, a few times I even mixed my daily Fortagen dose into my chocolate truffle to make it more palatable, but still didn't get the hyperphagia.
So it might be a sufficient amount of protein or something to trigger it.
I did try it a few times with non-sweetened, non-flavored whey powder and didn't get the effect, but also it wasn't a super rigorous test and then I had better experiments to do..
Fabulous. I don't get this effect, so I can't play with it, but it sounds like the sort of important detail that should be looked into.
Protein causes absolutely mental general food cravings. Why on earth?
I am not playing Socratic Games here. I am surprised and confused and have no answer. Especially since I no longer believe in my PUFAs/protein theory. But I think you should try to learn more about this.

My will is iron on this matter.
I'm a man of principles. But if you don't like them, I have other principles, too.
