In phosphatidylcholine and phosphatidylethanolamine, which are present in the mitochondrial membrane in greater proportions than cardiolipin, the portion of saturated fatty acids is greater.

"Broda Barnes, Gordon Skinner, and John Lowe all claimed to be able to fix these things using thyroid drugs."

Where might I find the best layman's explanation of this?

Broda Barnes book 'Hypothyroidism: The Undetected Illness' is very layman.

Skinner published a nice readable book, 'Diagnosis and Management of Hypothyroidism', aimed at fellow doctors.

Lowe published "The metabolic treatment of hypothyroidism", huge and technical.

I put lots of links to papers and other stuff on: r/thethyroidmadness/

But I think you need to use old reddit to see them. Try: https://old.reddit.com/r/thethyroidmadness/
